Yes - we have many clients that stitch up the kits by hand, just takes a bit more time, but that is half the pleasure isn't it?  Hand sewing is very theraputic indeed.  Some finishing aspects such as zig zagging the seams can be replaced by other methods such as using pinking shears and buttonholes could always be replaced with poppas or ribbon ties too.
